Why sift matcha before whisking?

Matcha is an extremely fine powder. In contact with ambient humidity, its particles naturally clump together, even inside a well-sealed tin. Those clumps do not dissolve: the whisk pushes them against the side of the bowl instead of breaking them up, and the foam stays uneven, with darker specks on the surface.

Sifting the powder solves the problem before it starts. The mesh separates the particles one by one and the powder falls into the bowl fully aerated. Whisking with a bamboo chasen then takes noticeably less effort to build a dense, even foam. It is the step beginners know least about — and often the one that separates a decent bowl from a genuinely good one.

Matcha sifter, strainer or tea sieve: what is the difference?

A standard kitchen strainer lets the clumps through: its mesh is far too wide for such a fine powder. A matcha sifter is built the other way round, with a tight mesh and a small diameter, designed to sit directly above the bowl. Do I need to sift matcha every single time?

Once the powder has been stored for a few days, yes. Matcha picks up ambient humidity and forms clumps that are often invisible to the naked eye. A few seconds of sifting are enough to restore an even texture.

Is the sifter dishwasher-safe?

Yes, food-grade stainless steel handles it. A rinse under clear water is usually enough, provided you let the sifter dry completely in the open air before storing it.

Can a tea strainer replace a matcha sifter?

Technically yes, but the result rarely measures up: the mesh of a standard tea strainer is too wide to break up the finest clumps, and its diameter is poorly suited to a matcha bowl.

How do I clean a matcha sifter without damaging it?

Tap the frame gently to release any residual powder, rinse under running water, then let it dry. Avoid scrubbing the mesh with an abrasive sponge: it deforms easily.
